Jones Dairy Farm Chicken Meatballs

whole wheat pita bread (large, 6 1/2″ diameter)

6 lbs.

shredded iceberg lettuce

200

tomatoes, sliced 1/4″ thick

6 lbs., 4 oz.

red onions, sliced

3 qt., 1/2 cup

Tzatziki sauce

Directions

  1. Preheat oven to 375 degrees and kettle or braising pan to 350 degrees.

  2. Place meatballs on lined sheet pans. Place in oven and cook for 15-20 minutes. Product must reach an internal temperature of 160 degrees for 15 seconds.

  3. Transfer meatballs to 4″ half long steamtable pans, cover with plastic wrap, and hold in warming cabinet assembly.

  4. Place pitas in hot holding cabinet for 10-15 minutes to warm up.

  5. To assemble gyros: Place 1 oz. of Tzatziki Sauce on each pita, top with 6 chicken meatballs, top with 1 oz. each of lettuce, sliced tomato, and sliced onions. Wrap in foil or place in parchment bags for presentation and service.
