Heat oven to 350°F. Line a rimmed baking sheet with aluminum foil.

Lay bacon on the prepared baking sheet in a single layer. Cook for 10 minutes and remove from oven.

Meanwhile, mix 1/2 cup brown sugar, maple syrup, gochujang, black pepper, cayenne pepper and ground ginger in a small bowl.

Spoon mixture over bacon. Return to oven and cook for 10 minutes. Flip the bacon and top with remaining 1/4 cup brown sugar. Bake until bacon is caramelized, an additional 5-10 minutes. Watch carefully as the sugar can burn.

Let bacon cool slightly on the baking sheet, about 1 minute. Use tongs to transfer to a clean sheet of parchment paper or aluminum foil. Cool for 5-10 minutes before serving.
