These easy make-ahead freezer-friendly sandwiches are packed with protein and perfect for breakfast on-the-go.

Preheat oven to 350˚F. Crack eggs or pour egg whites into lightly greased muffin tin. If using whole eggs, scramble each egg. Sprinkle with salt and pepper. Divide chopped veggies amongst 12 muffin cups. Cook whole eggs 15 minutes, or egg whites 22-25 minutes. Remove from oven. Allow to rest 3 minutes. Remove from pan.

While eggs are cooking, brown sausage patties in skillet over medium heat 3 minutes per side. Set aside.

Toast English muffins in toaster or on medium heat skillet sprayed lightly with cooking spray.

Assemble sandwiches using one English muffin, one sausage patty, one egg cup, and one slice of cheese. Drizzle maple syrup, if desired. Wrap each sandwich in wax paper. Stack in gallon size plastic bag.

When ready to eat, microwave wrapped sandwich for 1 – 1 1/2 minutes on high. Serve with piece of fruit for perfect grab and go breakfast.
