Loaded Baked Potato Dip with Canadian Bacon

large russet potato

1 package (6 oz.)

Jones Canadian Bacon, diced

1 package (8 oz.)

cream cheese, softened

3/4 cup

Greek yogurt

1 cup

shredded cheddar cheese

1 teaspoon

salt

1/2 teaspoon

garlic powder

1/2 teaspoon

onion powder

1/2 teaspoon

pepper

Crushed potato chips, for topping

Chives, for topping

Directions

  1. Heat oven to 425°F.

  2. Wrap potato in a wet paper towel and heat in a microwave until cooked through, about 4-5 minutes. Let cool slightly.

  3. Heat Canadian Bacon in a large skillet over medium heat for 4-5 minutes or until crisp.

  4. Scoop flesh of baked potato into a large bowl; mash using a potato masher. Mix in cream cheese and Greek Yogurt and continue to mash. Stir in cheddar cheese, 3/4 of Canadian Bacon, garlic powder, onion powder, salt and pepper. Stir until combined.

  5. Transfer mixture to baking dish and top with remaining Canadian Bacon and crushed potato chips.

  6. Bake for 20 minutes. Top with fresh chives and serve with chips! Enjoy!
