Directions
Preheat air fryer to 350°F. Split each sweet potato in half lengthwise. Spray with non-stick olive or avocado oil spray and season with salt and pepper.
Add the potatoes to the air fryer basket, flesh side down. Cook for 20 minutes.
While the potatoes cook, make the filling. Heat a medium skillet over medium-high heat. Add the sausage. Let brown for 3-4 minutes and then use a wooden spoon to break it up into small pieces. Continue to cook the sausage until it’s crisp and brown but not necessarily cooked through. Add the onion and reduce the heat to medium. Cook the onion until it begins to soften, about 2-3 minutes.
Add the beans, water, tomato paste, ketchup, chili powder, garlic powder, Worcestershire sauce and salt to the sausage and onion. Stir to combine. Bring to a boil and reduce to simmer. Let simmer until sweet potatoes are done cooking. Season to taste with salt and pepper.
Remove sweet potatoes and let cool slightly. Carefully spoon all but ¼-inch of the sweet potato out leaving a nice vessel for the chili filling.
Add the potatoes back to the air fryer. Carefully divide the filling between each potato. Sprinkle evenly with cheese. Cook for 2 minutes or until the cheese has melted.
