Bacon Pecan Bars

Bars are great for picnics, potlucks and anytime you crave a fuss-free treat. Inspired by pecan sandies, this one will do the trick.

2 cups | All-Purpose Flour |
1/2 cup | Granulated Sugar |
1/4 teaspoon | Salt |
1 1/4 cup | Unsalted Butter, divided |
4 | Eggs, lightly beaten |
1 cup | Packed Brown Sugar |
1/2 cup | Light Corn Syrup |
1/2 cup | Honey |
2 cups | Chopped Pecans |
1 teaspoon | Vanilla Extract |

Preheat oven to 350°F

Cook bacon slices in large, deep skillet or sauté pan over medium heat until crisp. Remove bacon from the pan, coarsely chop and set aside.

In medium bowl, whisk together flour, granulated sugar and salt. Cut in 3/4 cup butter with a pastry blender or your hands until mixture resembles fine crumbs. Press mixture evenly into a well-greased 9×13-inch pan. Bake crust for 20 minutes or until lightly browned.

Place beaten eggs into large mixing bowl.

In a large saucepan, combine brown sugar, corn syrup, honey and 1/2 cup butter. Bring mixture to a boil over medium-high heat, stirring constantly for 2 minutes. Remove mixture from heat.

Slowly whisk 1/2 cup of the hot mixture into the beaten eggs to temper them. Add remaining hot mixture into the egg mixture. Stir in pecans, chopped bacon and vanilla. Pour filling over the crust and bake for 35 minutes or until set in the center.

Cool pan on a wire rack. Cut into bars once completely cooled.
