Ingredients

Jones Dairy Farm Dry Aged Bacon

2 cups

All-Purpose Flour

1/2 cup

Granulated Sugar

1/4 teaspoon

Salt

1 1/4 cup

Unsalted Butter, divided

Eggs, lightly beaten

1 cup

Packed Brown Sugar

1/2 cup

Light Corn Syrup

1/2 cup

Honey

2 cups

Chopped Pecans

1 teaspoon

Vanilla Extract

Directions

  1. Preheat oven to 350°F

  2. Cook bacon slices in large, deep skillet or sauté pan over medium heat until crisp. Remove bacon from the pan, coarsely chop and set aside.

  3. In medium bowl, whisk together flour, granulated sugar and salt. Cut in 3/4 cup butter with a pastry blender or your hands until mixture resembles fine crumbs. Press mixture evenly into a well-greased 9×13-inch pan. Bake crust for 20 minutes or until lightly browned.

  4. Place beaten eggs into large mixing bowl.

  5. In a large saucepan, combine brown sugar, corn syrup, honey and 1/2 cup butter. Bring mixture to a boil over medium-high heat, stirring constantly for 2 minutes. Remove mixture from heat.

  6. Slowly whisk 1/2 cup of the hot mixture into the beaten eggs to temper them. Add remaining hot mixture into the egg mixture. Stir in pecans, chopped bacon and vanilla. Pour filling over the crust and bake for 35 minutes or until set in the center.

  7. Cool pan on a wire rack. Cut into bars once completely cooled.

Won my office Xmas dessert competition with this

Excellent. I easily won my office Xmas dessert competition with this. I also added Bourbon to the recipe. You might think there's too much bacon, but it's so sweet that the sweetness really balances it out. I also added some Cayenne pepper for some heat. I also think the pecans and bacon should be in larger chunks than the recipe and picture imply. If the chunks are too small they blend too well together and you can't really taste the components. I would also have liked to make the bacon a bit crispier but when you mix it in with everything else and bake it, it gets a bit soft. Maybe overlay some (not all) of the bacon on top of the mix before baking? Next time I'll try adding some maple syrup in place of some of the sugar. If I could add a bit of smokiness, I'd try that too.
