Directions
Heat oven to 400°F degrees. Line a large, rimmed baking sheet with foil.
Lay bacon on the baking sheet. Par-bake the bacon for 8 minutes.
While the bacon cooks, cut a 1/2-inch slit into each date using a small paring knife and remove the pit. Stuff each date with 1-2 teaspoons of goat cheese (depending on the size of each date).
When the bacon is cool enough to handle, cut each piece in half with kitchen shears. Remove the used foil from the sheet pan and line with a new piece of foil. Place a cooling rack inside the baking sheet.
Wrap half piece of a piece of bacon around each date and secure with a toothpick. Transfer dates to the baking sheet and bake until the bacon is brown and crispy, another 10-15 minutes.
Transfer to a serving platter. Drizzle with hot honey and sprinkle with flaky sea salt.
