Caramelized Onion Patty Melt

2 large | Yellow onions, peeled, cut in half, then sliced thin |
12 tablespoons | Butter |
16 slices | Bread (sourdough or marble rye) |
8 thick slices | Cheddar cheese |
8 thick slices | Swiss cheese |
1 cup | Thousand Island Dressing |

Heat 4 tablespoons of butter over low-medium heat in a skillet, until melted. Add onions and stir occasionally. Continue to cook until onions are caramelized, about 30 minutes.

While onions cook, in a medium bowl, add ground beef and sausage roll. Mix until evenly combined, but do not overmix. No additional seasoning is needed.

Divide meat into 8 equal parts (an easy tip is to use a cupcake scoop or ice cream scoop). Form each into a thin patty, slightly larger than the size of your bread slices.

Heat a second skillet over medium heat, and once hot, add the first 4 patties. Cook approximately 4-5 minutes, then flip and cook another 2-3 minutes. Meat should have a cooked temperature (internal) of 165 ˚F . When patties are cooked, remove from skillet and keep warm. Cook the remaining 4 patties in the same manner.

Wipe out the pan, then add 4 tablespoons of butter and melt over medium heat.

While butter is melting, build sandwiches on a cutting board in the following order:
• Bottom slice of bread
• 1 tablespoon dressing
• 2 slices of Cheddar
• Pork/beef patty
• Caramelized onions
• 2 slices Swiss cheese
• More dressing, if desired
• Top slice of bread
• Spread remaining butter on top of bread -
Carefully transfer sandwiches to skillet with melted butter. Cover, and cook on medium-low, about 4-5 minutes, or until bottom bread is golden brown. Carefully flip over, and finish cooking, 1-2 minutes, until top is equally golden.

Remove from skillet, cut in half on a diagonal, and serve hot. Add toothpick, if necessary, to hold sandwich together.
