Garlic and Lemon Green Beans with Canadian Bacon

1 tablespoon | Olive Oil |
1 (6 oz) package | Jones Dairy Farm Canadian Bacon, julienned |
4 | Garlic Cloves, minced |
1 teaspoon | Salt |
1 teaspoon | Black Pepper |
1/2 teaspoon | Red Pepper Flakes |
2 teaspoons | Lemon Zest |
2 tablespoons | Lemon Juice |
1/2 cup | Dried Cranberries |
1/2 cup | Sliced Almonds |

Fill large pot with cold water and bring to boil. Season with lots of salt and return to boil. Drop in trimmed green beans and cook until bright green and tender, about 2 minutes. Immediately transfer green beans to large bowl of ice water to stop cooking process and to keep their bright green color. Drain and set aside.

Heat large skillet over medium-high heat. Add in olive oil and garlic. Cook for a few seconds to bring out garlic flavor. Drop in sliced Canadian Bacon and cook for 1 to 2 minutes, until browned and crispy.

Stir in green beans and toss to fully combine. Season with salt, pepper, red pepper flakes and lemon zest. Cook for about 5 minutes to crisp up beans. Add lemon juice, cranberries and almonds and stir once more. Cook for another minute. Serve.
