1 lb. | Jones Dairy Farm No Antibiotics Ever Chicken Sausage Links, thawed and sliced |
2 | stalks of celery, chopped |
2-3 small | carrots, chopped |
1 | onion, finely chopped |
3 cloves | garlic, minced |
4 cups | chicken stock |
2 cups | water |
1 tablespoon | garlic powder |
2 cups | spinach |
3/4 cup | small shaped gluten free pasta, like stelline or pastina |
salt and pepper to taste | |
grated Pecorino cheese, for garnish (optional) |

Directions

Heat olive oil in a large pot over medium heat. Add sausage and sauté for 5 minutes, breaking apart the sausage until it is the texture your prefer.

Add celery, carrots, onion and garlic; stir to combine. Add stock, water and garlic powder. Simmer for 10-15 minutes or until veggies are tender.

Stir in the pasta and cook for 8-10 more minutes. Remove from heat; stir in spinach to wilt. Season to taste.

Divide between bowls and garnish with cheese, if desired. Enjoy!
