Ingredients

Jones Dairy Farm No Antibiotics Ever Chicken Sausage Links, thawed and sliced

stalks of celery, chopped

2-3 small

carrots, chopped

1

onion, finely chopped

3 cloves

garlic, minced

4 cups

chicken stock

2 cups

water

1 tablespoon

garlic powder

2 cups

spinach

3/4 cup

small shaped gluten free pasta, like stelline or pastina

salt and pepper to taste

grated Pecorino cheese, for garnish (optional)

Directions

  1. Heat olive oil in a large pot over medium heat. Add sausage and sauté for 5 minutes, breaking apart the sausage until it is the texture your prefer.

  2. Add celery, carrots, onion and garlic; stir to combine. Add stock, water and garlic powder. Simmer for 10-15 minutes or until veggies are tender.

  3. Stir in the pasta and cook for 8-10 more minutes. Remove from heat; stir in spinach to wilt. Season to taste.

  4. Divide between bowls and garnish with cheese, if desired. Enjoy!
