2 tablespoons | Olive oil |
5 | Large eggs, scrambled |
6 | Small corn tortillas |
1/3 cup | Cilantro, minced |
1/3 cup | Cotija cheese |
Salsa for serving, optional |

Preheat grill to medium high heat and add the sausage, ham, bell peppers, onion and zucchini. Cook until sausage and ham are cooked and crisp and the vegetables are soft, about 10 minutes. Remove from grill and slice, set aside

Add 10-inch cast iron skillet to grill, close the cover and until hot. Once skillet is hot, add olive oil and eggs. Stir the eggs until fully scrambled and cooked, about 10 minutes.

Add tortillas to grill to lightly toast and assemble tacos by adding eggs, vegetables, cilantro and cheese. Serve with salsa if desired.
