These Grilled Zucchini Pizzas are a tasty use of summer produce and help keep you keto or low carb.

Ingredients

1/2 cup | Pizza sauce |
1 cup | Mozzarella cheese, shredded |

Neutral cooking oil, for brushing | |

Additional pizza toppings: peppers, olives, pineapple, mushrooms, etc. |

Trim the ends off the zucchini and cut in half lengthwise. Remove the seeds, brush with oil and season with salt and pepper.

To Grill: Preheat grill to high heat.

Grill zucchini halves over high heat for 3-5 minutes, just until the begin to soften. (Skip this step if using an oven)

Add pizza sauce, shredded mozzarella cheese, and chosen pizza toppings to the center of each zucchini half. Top with scoops of ricotta cheese.

Put the zucchini pizza boats back on the grill for 5-10 minutes, until the cheese has melted. Garnish with fresh basil, if desired.

To Bake: Preheat oven to 425º F.

Bake zucchini pizza boats on baking sheet for 12-14 minutes, or until cheese has melted.

To Air Fry: Preheat to 390º F for 5 minutes.

Add the zucchini pizza boats 2-3 at a time and cook for 8 minutes.
