2 tablespoons | oil, divided |
2 teaspoons | minced garlic |
1/2 cup | diced onion |
1/2 cup | diced carrot |
1/2 cup | diced celery |
1 tablespoon | Italian seasoning |
2 teaspoons | salt |
48 oz. carton | chicken or vegetable broth |
2 small | yellow potatoes, diced |
1 can | white beans, drained and rinsed |
1 cup | chopped kale |
1/2 cup | shredded Parmesan cheese, for topping |

Heat 1 tablespoon oil in a large Dutch oven over medium high heat. Add ham and sauté for 2-3 minutes or until lightly browned. Remove from pan; set aside.

Heat remaining tablespoon of oil. Add garlic and sauté for 1 minute or until fragrant. Add onion, carrot, celery, Italian seasoning and salt. Sauté until soft, 4-5 minutes.

Add broth, potatoes and beans. Bring to a simmer, cover and cook for 15-20 minutes or until potatoes are soft.

Add ham and kale. Stir until kale wilts. Divide between bowls and serve with fresh parmesan cheese or your favorite bread.
