jalapeño pepper, seeded and minced

buttermilk

melted butter

Directions

  1. Heat oven to 450°F. Line a baking sheet with parchment paper.

  2. Whisk together flour, baking powder, baking soda, and salt in a large mixing bowl.

  3. Add the butter and mix with a fork until evenly distributed.

  4. Stir in cheese, Canadian bacon, and jalapeños until coated and evenly mixed.

  5. Make a well in the center and pour in the buttermilk. Gradually mix it into the dry ingredients until a shaggy dough forms, first with a fork and then with your hands to bring the dough together.

  6. On a lightly floured surface, roll the dough into a ¾ -1 inch thick circle. Use a 3-inch cutter to cut into 12 rounds. Re-roll the scraps, shape, and cut until all dough is used.

  7. Transfer biscuits to the prepared baking sheet and brush the tops with melted butter.

  8. Bake for 18-20 minutes or until golden brown.
