Loaded Cauliflower Steaks with Bacon

Hearty and delicious, these 30-minute cauliflower steaks with bacon are easy enough to make for a weeknight dinner.

1/4 cup | Extra-Virgin Olive Oil |
1/2 teaspoon | Garlic Powder |
1/2 teaspoon | Paprika |

2 cups | Cheddar Cheese, shredded |
10 slices | Jones Dairy Farm Uncured No Sugar Dry Aged Bacon, cooked and crumbled |
2 tablespoons | Finely Chopped Chives |

Remove and discard leaves from each cauliflower head. Trim stem so that the cauliflower can lay flat on cutting board with core remaining intact.

Cut each cauliflower into thick “steaks” about 3/4″ thick.

In small bowl, whisk together olive oil, garlic powder and paprika. Season mixture with salt and pepper.

Heat grill or grill pan to medium. Brush one side of each steak with the olive oil mixture and place brushed side down on grill. Brush top sides with olive oil mixture and cook until tender and charred in spots, about 8 minutes per side.

Top each cauliflower with cheese and bacon. Continue heating until cheese is melted.

Remove from grill and sprinkle with chives. Additional suggested toppings: Ranch Dressing, Sour Cream, Cherry Tomatoes.
