Sausage, Apple, and Caramelized Onion Quesadillas
These quesadillas feature a savory-sweet filling of Jones Dairy Farm chicken sausage, caramelized onions, diced apples, and melted fontina cheese.

Heat oven to 300°F. Get a baking sheet ready to keep the quesadillas warm.

Melt butter in a medium nonstick skillet over medium-high heat. Add sliced onion; cook for 2-3 minutes until they begin to soften. Reduce heat to low; add salt and sugar. Continue to cook, stirring frequently until they are a deep caramelized color, about 15-20 minutes.

Once the onions are caramelized, add the apple, sausage and 2 teaspoons of water to the pan. Increase heat to medium; cook until the apples are slightly softened, about 3 minutes.

Sprinkle four tortillas with a 1/4 cup of cheese. Evenly divide the filling between the four tortillas. Sprinkle remaining cheese over filling. Cover with another tortilla.

Heat a large skillet over medium-low heat. Add one quesadilla to the pan. Cook for 2-3 minutes until golden brown; flip and cook an additional 1-2 minutes until golden brown and the cheese has melted. Transfer quesadilla to the sheet pan and keep warm in the oven while you make the rest of the quesadillas. Repeat with remaining quesadillas.

Slice into quarters and serve with sour cream.
