1 | onion, finely diced |
1 | red bell pepper, finely diced |
3 | cloves garlic, minced |
28 oz. can | diced tomatoes |
15 oz. can | sweet corn, drained |
15 oz. can | red kidney beans, drained and rinsed |
4 tablespoons | chili powder |
2 teaspoons | ground cumin |
1 teaspoon | dried oregano |
1 1/4 cups | bone broth |
salt & pepper, to taste | |
shredded cheddar cheese, sour cream or jalapeños for garnish |

In a large pot over medium heat, add the thawed sausage roll and break it up with a wooden spoon.

Add the diced onion, red bell pepper, and garlic to the pot. Cook until sausage is browned and cooked through and vegetables soften.

Stir in diced tomatoes (with juice), sweet corn, and red kidney beans. Mix well to combine.

Sprinkle in chili powder, ground cumin, dried oregano, and season with salt and pepper to taste. Add bone broth, stir and bring the mixture to a simmer. Once simmering, reduce the heat, cover the pot, and let it cook for 30-45 minutes, stirring occasionally, to allow the flavors to meld and the soup to thicken slightly.

Before serving, adjust seasoning if needed. Top with your choice of shredded cheddar cheese, a dollop of sour cream, or sliced jalapeños for a kick of heat.
