Directions
-
Preheat oven to 425°F.
-
In medium skillet, cook sausage according to package directions until browned and cooked through, breaking it up as it cooks. Drain and set aside.
-
In medium saucepan, melt butter. Stir in flour, salt and pepper. Gradually whisk in milk, stirring constantly until thickened. Stir in sausage. Set aside.
-
Place pizza crusts on baking pan coated with cooking spray. Layer sausage gravy on crust. For thinner crust, use 1/2 to 3/4 cup, for thicker crust, use heaping cup of gravy. Top with mozzarella cheese and green onions, dividing between pizza crusts. Using a spoon make 4 wells in the toppings, one for each egg. Crack eggs into wells.
-
Bake 15 to 20 minutes or until eggs are set and pizza is hot. Serve with extra sausage gravy.
-
To Make Ahead: To freeze, wrap pizza in plastic wrap before adding eggs. To cook from freezer: remove plastic wrap and place on baking dish coated with non-stick spray. Bake at 425°F for 15 minutes or until pizza is heated throughout. Crack eggs on top, return to oven for an additional 15 minutes or until eggs are set and pizza is piping hot.
