This sausage and kale soup is a light healthy meal that is still perfectly comforting.

1 | Small Yellow Onion, diced |
4 cloves | Garlic, minced |
1 teaspoon | Italian Seasoning |
1/4-1/2 teaspoon | Crushed Red Pepper Flakes (optional) |
6 cups | Chicken Broth |
12 oz | Cauliflower Rice (can be frozen) |
6 cups | Kale, roughly chopped |
1/4 cup | Coconut Cream |
Salt & Pepper, to taste |

Heat olive oil in a large pot over medium heat. Add turkey sausage; cook about 5 minutes or until browned.

Add the onions and cook until soft and translucent. Add garlic and seasonings; cook until fragrant.Add the broth, stirring to combine, and bring to a boil. Add cauliflower rice and simmer until softened, about 5 minutes.
