Ingredients

Small Yellow Onion, diced

4 cloves

Garlic, minced

1 teaspoon

Italian Seasoning

1/4-1/2 teaspoon

Crushed Red Pepper Flakes (optional)

Chicken Broth

12 oz

Cauliflower Rice (can be frozen)

6 cups

Kale, roughly chopped

1/4 cup

Coconut Cream

Salt & Pepper, to taste

Directions

  1. Heat olive oil in a large pot over medium heat. Add turkey sausage; cook about 5 minutes or until browned.

  2. Add the onions and cook until soft and translucent. Add garlic and seasonings; cook until fragrant.Add the broth, stirring to combine, and bring to a boil. Add cauliflower rice and simmer until softened, about 5 minutes.
