Directions
-
Place the brie in the freezer for 15 minutes so you can easily slice off the rind.
-
Meanwhile, cook the bacon in a medium skillet over medium heat. Slowly render the fat from the bacon, stirring often, until bacon is crispy. Use a slotted spoon to transfer bacon to a paper towel-lined plate. Reserve 1 tablespoon bacon fat. Do not wipe out skillet.
-
When the brie has chilled, use a very sharp chef’s knife to remove and discard the rind. Place brie in the bowl of a stand mixer. Mix on medium speed until the brie starts to break down. Increase the speed to medium-high and continue to whip the brie until it’s very smooth, this will take about 10 minutes.
-
Add reserved bacon fat to skillet and heat over medium heat. Add the chili crunch seasoning and sauté for 30 seconds, stirring constantly with a wooden spoon. Add the honey. Continue to cook, scraping the bacon bits from the bottom of the pan until the honey is thin and almost liquid. Turn heat to low to keep warm until brie is ready to serve.
-
To assemble, spread the brie on to a serving platter. Top with bacon and drizzle the honey mixture over the top. Sprinkle with green onion and flaked salt if using. Serve with crackers or baguette slices.

*Note: If you cannot find chili crunch seasoning, you can make your own by combining 3/4 teaspoon dried garlic, 1/2 teaspoon dried onion and 1/4 teaspoon red pepper flakes.
